20.5. Conclusions

The time-saving advantage makes microwave heating one of the most popular and useful heating techniques in food processing, and with the help of developing technology, it will still have the potential to be used in many food processes. However, nonuniform heating limits the widespread use of microwave heating in industrial applications. Future studies on process and food-specific oven design, combined heating, pulsed microwave heating, or modular heating (Li et al., 2011) may help to overcome the nonuniform heating problem.
