Carol Arendall spent close to 20 years at Saks Incorporated starting as an assistant risk manager, moving up to risk manager, and finally as the director of risk management for 14 years. At Saks, Carol was responsible for purchasing all the property and casualty insurance as well as claims management and service of process. Carol joined OfficeMax in 2005 as the director of risk management, responsible for the purchasing of all the property and casualty insurance, claims management, Bermuda-based captive and self-insured fronting programs, and legacy claims portfolio. Carol was also a leader of the enterprise risk management initiative at OfficeMax. In July 2009, Carol joined US Foods Inc. as their vice president of risk management. US Foods is one of America’s largest food service distribution companies with 26,000 employees, 6,000 trucks, and more than 60 distribution centers across the country. US Foods distributes food and related products to more than 250,000 customers. Carol is responsible for purchasing insurance and claims management, as well as providing strategic direction on risk mitigation strategies throughout the company. Carol is part of the US Foods senior leadership group and is a part of the business risk committee.
