Despite working hard over the weekend making sure the shop is tidy and welcoming, the menus are written and a host of other little details are sorted out, both Emma and Alan arrive at the shop at 7 a.m. on the Monday morning. They’re excited and nervous. The food delivery arrives late at 8.15, and it’s the most excruciating 15 minutes of their lives. As soon as it arrives they begin preparing the standard menu salads to go on display, and arranging the ingredients for the pick-your-own salads and juices nicely. This work is only interrupted by the arrival of the radio reporter at 8.30 and, at 8.42, Emma – shaking like a leaf – goes live on the airwaves across the city.

When the shop opens at 11.30, they wait expectantly for their first customer. ...
