Emma and Alan do this by spending their lunch hours for a week standing outside different sandwich shops in the area and counting the number of customers who buy from there in a two-hour period. Emma does the first hour, then Alan takes his lunch break an hour later to take over.

They then see the pattern of when people shop for lunch and get an average figure of how many people buy from a shop during the lunch period. This figure is 172.
