It might seem like a contradiction, but you won't be successful with an improvisational production unless you and your cast plan for it very carefully.

For a feature-length production, whether structured or improvised, budget the time and money for one or two weeks of extended rehearsals in advance of shooting. Even interviews and documentaries can benefit from preliminary meetings. Make the subjects comfortable. Tell them what situations you'll be putting them in. Give them a list of questions to think about. Do a fake interview.
