In my eyes, your stress-test infrastructure pertains to everything that will actually be tested—the servers, disk subsystems, OSs, and application/software stacks relevant to your SAP servers, system landscape, and the entire mySAP component suite deployed to emulate your Production environment. In the best of worlds, you'll get to run your stress test on your soon-to-be-deployed actual Production system, in fact.
