When using the simple weighted method of calculating the final grades, you can designate any activity as extra credit. When an item is extra credit, its points are not added to the total possible points for the category.
First, navigate to Grade administration | Setup | Categories and items. From there, select the extra credit item for editing:
Once you are on the editing page for the item, you can designate it as extra credit just by clicking on the checkbox labeled Extra credit.
