Styling Page Layouts with DIVs or Tables

The two new page layouts introduced in SharePoint Server 2010, specifically EnterpriseWiki.aspx and ProjectPage.aspx, are based wholly on DIV layout. Legacy page layouts however, predominantly use tables and table elements to style pages. When creating new page layouts, you can choose to use either DIVs or tables. In fact, if you choose to create page layouts and style with DIVs then the out-of-the-box page layouts provide a good example, and you can reference the out-of-the-box style sheets, such as page-layouts-21.css.
