To change your preferred Web browser, you now open Safari (in your Applications folder) and choose Safari→Preferences. To specify the email program you prefer, open Mail and choose Mail→Preferences.
Mac OS X 10.3 no longer offers any way to choose a preferred FTP program or news reader. At least not without adding More Internet Options (a free System Preferences panel from http://www.monkeyfood.com ).
