Speech
In applications where there is typically a lot of text, your Mac can read selected text to you. You'll find a command for “Speech…” towards the bottom of the Edit menu in applications such as Mail and TextEdit, and you can use the Services menu option for “Speech” in iChat and Safari. (The Services options are in the application's menu.)
