The best way to create black-and-white photographs is to capture your images in a raw format and carry out the color to black-and-white conversion in Lightroom. This gives you the ultimate flexibility to process the original raw color capture almost any way you like. All of this can be decided at the postediting stage, as opposed to choosing a black-and-white JPEG mode setting in the camera.
