Office hours are generally standard Monday through Friday, but there is a great variation with small businesses, public museums and offices, and restaurants. Be very careful to confirm all your business appointments several days before your arrival.
If you wish to tour Paris, or eat, be aware that restaurants may be closed on Sundays, and museums may be closed on Mondays or Tuesdays. The museums of the city of Paris are open every day except Mondays, from 10:00 A.M. to 5:40 P.M. National museums, like the Louvre, are closed on Tuesdays . . . except for Versailles, the Trianon, the Rodin Museum, and the Orsay.
