Today the term dietitian conjures up images of a credentialed nutrition professional working to help individuals, groups, and institutions utilize food to maximize health outcomes. But the profession of nutrition and dietetics has come a long way since the American Dietetic Association was founded in 1917. This chapter seeks to outline a brief history of dietetic practice in North America, largely following the establishment and progression of the Academy of Nutrition and Dietetics (AND), formerly known as the American Dietetic Association (ADA).
