29.10. The Use of AFP in Food Preservation

Since the discovery of AFPs some 40 years ago, much research has attempted to understand the molecular function of this novel group of proteins. During the past decade, considerable effort has been put into exploiting the macroscopic effect of these proteins in various industrial applications, including food, cryopreservation of tissues, embryos and organs, and clathrate (gas hydrate) inhibition. However, the molecular mode of action of AFPs is still not completely understood, even though technological advances have opened up a plethora of new experimental methods since the first observations of AFPs in nature.
