In spite of the exciting possibilities that high-pressure freezing offers, some obstacles make it difficult to introduce this technology into the food industry. Currently, industrial pressure vessels, able to work at subzero temperatures, do not exist in the market. Cooling conventional pressure equipment would be a difficult task due to their large size.
