3-AMolecular compositions of biopolymers

The molecular compositions and structures of most of biopolymers have been determined using elemental analysis, FTIR and NMR spectrometry [1, 9]. The molecular compositions of biopolymers are shown in Table 3-1. According to their molecular compositions, the solubility properties of these biopolymers are also different from each other (Table 3-2).
